Zucchini With Paleovally Pasture-Raised Turkey Sausage
This is a delicious and healthy fall recipe using the Paleovalley 100% Pasture-Raised Turkey Sausage. This sausage is 100% Pasture-Raised. That means no chemicals, no pesticides, no antibiotics, no steroids, no hormones, and no crates. All the spices are organic, and the sausages are naturally fermented, making them rich in probiotics. They are great to carry as a snack, or for use in recipes, such as this one.
The other ingredients are helpful as well. Zucchini is slightly cooling and clears excess heat. It also is rich in protein, fiber, calcium, iron, magnesium, potassium and more. Hemp seed nourishes the blood and helps promote bowel movements. They are also very nutrient-dense with many vitamins and minerals, including beneficial fatty acids such as SDA, GLA, and omegas 3 and 6. These help battle inflammation and benefit the heart. All of that, plus it’s easy to make, and delicious to eat!
Zucchini and Sausage Skillet with Toasted Pine Nuts and Hemp
Ingredients:
3 large zucchini, in round slices
4 Paleovalley Pasture-Raised Turkey Sticks, sliced thin
1 Tbsp and ½ tsp. Olive oil, divided
½ cup pine nuts
2 Tbsp hemp seeds
1 tsp maple syrup
½ tsp chili powder
Sea salt and pepper to taste
Optional herbs like rosemary or parsley
Directions
1. Add pine nuts and hemp seeds to mixing bowl, with ½ tsp olive oil, chili powder, and maple syrup.
2. Heat a skillet over med-high heat, then add nuts and seeds. Lightly roast until golden brown, about 3 min. (Stir, so they don’t burn.) Remove from skillet and set aside.
3. Add remaining 1 Tbsp olive oil to a pan on med-high heat, then add zucchini and sausage. Cook for 10 min. Stir occasionally until zucchini is soft and a nice golden brown.
4. Serve, and top with pine nuts and hemp seeds. Also, garnish with the fresh herbs.
