Winter Black Bean Congee
One of the basic health goals in winter, is to preserve and store energy for spring. We also want to create balance, and unblock obstructions to the energy flow. The kidneys are associated with winter, as their energy helps to astringe and store. Do not overdo use of salt during this season, as this will overwork the kidneys. Here is a good winter recipe that will help strengthen the kidneys, and build and your energy. (From Nourishu.com).
Black Bean Congee (Serves 1 or 2 – for more, increase measures proportionally)
2 Tbsp Dry Black Beans
1 Tbsp Dry Small Red Beans
30 g. Chinese Yam (or other yam, preferably white)
10-20 Goji Berries
½ cup white rice
Instructions
- Soak the beans for 2 hours and rinse.
- Soak the goji for 30m and rinse.
- Rinse the rice.
- Boil 4 cups of water, add all ingredients, and again bring to a boil. Then simmer on low.
- Cook 45m or until beans are soft, adding water as needed.
This is best to eat in the evenings with dinner. Small red beans are also a great weight-loss food. Enjoy!
