Winter Recipe – Kale with Tomatoes & Adzuki Beans

Coming into the final weeks of winter, we still want our diet based on bitter foods, and seasonally dark greens such as kale. Warm foods are also welcome, to balance with the cold of the season. Most of the foods you see at your grocer will reflect these aspects of the season, with the more bright and colorful foods showing up closer to springtime.
This recipe features bitter green kale and the wonderful adzuki bean. Adzuki beans have protein, fiber, and minerals. They are mildly sweet, which is good for digestion, and they also aid in weight loss. This recipe is good for digestion, reduces swelling and edema, stops vomiting, and nourishes the heart.
Ingredients
– 2 TBS, divided, extra-virgin olive oil (EVO)
– 1 pint grape tomatoes
– 3 TBS balsamic vinegar
– 2 bunches black kale (about 1 pound) Thick ribs discarded, leaves cut into 2 inch pieces
– 1 15oz. Can adzuki beans, rinsed and drained
– Sea salt
– Fresh ground black pepper
– ½ cup shredded vegan or regular Parmesan cheese
Directions
1. Heat 1 TBS EVO in a large skillet in medium heat. Add and cook tomatoes. Stir occasionally till they blister and blacken, about 10 minutes.
2. Add vinegar, kale, and beans. Cook, stir, till kale wilts, about 30 seconds.
3. Transfer all to a large bowl. Season with salt and pepper to taste. Stir in the Parmesan if you like.
4. Enjoy!
