Winter Bok Choy, Shiitake Soup
This month’s recipe is borrowed from Alcantar Acupuncture’s blog. It is Bok Choy, Shiitake, Ginger “Happy” soup to improve digestion, boost immunity, and build Qi-energy. My mouth is watering just looking at this one, but first, the healthy stuff. Bok Choy is full of vitamins, moves the bowels, and manages blood sugar. The vermicelli rice noodles are gluten-free. Shiitake strengthens Qi, helps immunity and lowers cholesterol. Garlic has many health benefits, especially for the blood and heart. Ginger is anti-inflammatory, aids with stomach upset, and helps fight colds. Sun-dried tomatoes have vitamins and fiber. There’s some lemon juice that fights toxins and helps balance your body’s Ph. Lastly, some red-pepper flakes, which combat inflammation. The whole thing is also vegan, and gluten-free.
Ingredients
1 lb. Baby Bok Choy, or 2 Large Bok Choy. Washed, separated, cut into large pieces.
4 oz. Vermicelli Rice Noodles.
3 oz. Shiitake Mushroom
1 or more cloves of garlic, finely chopped.
1 tsp. Fresh ginger, finely chopped.
4 slices sun-dried tomato, finely chopped.
4 cups vegetable broth.
Freshly squeezed juice from ½ lemon.
¼ cup EVO (Olive oil).
Pinch of red pepper flakes. Salt and pepper to taste.
Directions
1. Large, deep saute pan, over medium/high heat.
2. Add oil, heat till hot, not smoking.
3. Add mushrooms and cook for 2 minutes until they start to color.
4. Add Bok Choy and cook till they wilt.
5. Add garlic, ginger, pepper flakes and cook for just under a minute.
6. Add broth, lemon, and sun-dried tomatoes. Cook for a few minutes, until broth bubbles.
7. Add rice noodles and cook till soft, but still slightly firm.
8. Season and Serve.
This is a great soup to have on hand if you’re getting sick, or recovering from a cold. It’s also great just to enjoy it. I hope you print it out and give it a try, Happy Holidays!
