Hot apple cider is a traditional fall treat in many cultures. This version from TCMWorld.com has a distinct TCM flavor. Apples strengthen the lungs, which are associated with the seasons metal element, most susceptible to the dry air of autumn. They also are easily digestible, and strengthen the earth element of the spleen and stomach. Last but not least, they help the liver to keep things moving. The warming herbs of cinnamon, ginger, and cloves are also great digestive aids. The optional lemon zest adds some more astringent action, draining out excess dampness. This is one refreshment you’ll want to consume warm, as the days shorten, and the leaves change.

Ingredients
- 3 Parts Apple Juice
- 1 Part water
- 1 cinnamon stick
- 1 thinly sliced piece of ginger (optional – about 1 Tbs)
- Several thin slices of lemon zest (optional)
- Several Whole Cloves (optional – too much makes bitter)
- Brown Sugar (Optional)
Instructions
- Heat the water and juice in a tall, covered pot, on high.
- Prep the slices, and add them.
- Once the pot boils, turn down the heat, and simmer for 15 minutes.
- Remove from heat, and strain out particulates.
- Use thinly sliced lemon as decoration in cups.
- Add some brown sugar to taste.
