Summer Foods, Finding Balance

Summer Recipe – Chilled Cucumber Soup

 Summer is the hottest time of year, so it makes sense that you’d want to find ways to stay cool.  One effective way is by your choice of foods. There are plenty of foods that help cool you down in summer.  For example pearl barley, watermelon, pineapple, cucumber, and apples. There is one important thing to keep in mind though.  Too much cold from your food can hurt your digestion, and lead to loose stools or diarrhea. For that reason, it is important to include these foods moderately, especially if you’re prone to digestive disruption.

 The other solution is to eat a meal that balances the cold aspects of the food with slightly warming foods, to help maintain good digestion.  For example this summer soup recipe from AOMA.edu.

 Chilled Cucumber Soup

4 cups chopped cucumber                                    Puree the whole mixture in the blender.

2 cups water or broth                                             Serve chilled, or warm.

1 cup yogurt                                                            Serves 4-6.

1 clove garlic

Several Mint leaves.

 The cooling nature of the cucumbers and mint, is balanced by the warmth of the garlic.  Yogurt aids in digestion as well. This soup clears heat, toxins, and excess water from the body.  While also being energizing and refreshing. You can add to this as you’d like, but I think you will agree this recipe is simple, and effective.  Enjoy!
