In Spring, begin again.
A new season means a new flavor, and from TCM that flavor is sour. Winter was all about storage. In Spring now we focus on clearing out the clutter, and getting-on with movement. In western diets we sometimes call this “a detox,” or a “cleanse.” Important organs at this time of year are the Liver and GallBladder. These respectively filter the blood, and help digestion of fatty foods. So having sour foods this time of year helps wake-up and prime these organs for cleansing our system.
TCM literature states that, “the sour flavor gathers and astringes.” So if you can picture this: in Winter we stored up lots of nutrients, but also toxins, much like a full sponge. Sour and astringent foods have the action of wringing out that sponge. For the sour flavor, a little goes a long way, so don’t overdo it. But adding occasional sour foods will have you feeling lighter and more energetic. It also means reducing the buildup of toxins in your system.
Now what makes a food “sour” is not always obvious, but these foods are all good for the liver in various degree: from tcmworld.org) pickles, sauerkraut, kimchee, bamboo shoots, eggplant, lemon, eggplant, vinegar, bee pollen, fennel, lotus, broccoli rabe, garlic, safflower oil, dandelion greens, ginger, scallions. Notice how many of these are seasonal to spring. Along with that, they tend to be green, as greens are abundant in spring. Remember, for ecology and freshness, local and seasonal food are usually best.
