Eating According to the Five Phases – Winter
Winter is a time for turning inward. The cold weather calls for warm and bitter foods, such as soups, kale, arugula, dandelion, and parsley. This will maintain the balance of yin and yang. It is a time for slowing down and taking time to rest, restore, and reflect. To find a recipe that will help along these lines, we will look at one from The Chinese Medicine Cookbook, by Stacey Isaacs.
Warming Congee with Bitter Greens
This recipe is vegan, gluten-free, dairy-free, and nut-free. It serves 4, takes 5 minutes of prep-time, and cooks in 45 minutes.
Ingredients:
1 cup of sushi rice
½ tsp. Sea salt
1, (1 inch) piece of fresh ginger, peeled and sliced
7 cups vegetable broth
4 cups chopped, de-stemmed kale, swiss chard, mustard greens, and/or collard greens
Directions:
1. Combine rice, salt, ginger, and broth in a large pot. Boil over medium heat, then reduce to simmer for 25 minutes, stirring occasionally.
2. Stir in greens and simmer for an additional 20 minutes, stirring occasionally. Enjoy!
Congee, or rice porridge, can be made many different ways with various healing benefits depending upon its ingredients. It’s a great meal for breakfast and is sometimes left to simmer overnight for this purpose. Eaten as a breakfast, it will give a great kick-start to your day. Because the cooling energy of bitter greens balances the warm congee, this makes a great recipe for someone recovering from cold and flu as well.
According to the book, benefits of this recipe include: better digestion, regulating metabolism, warms the body, reduces weakness, increases circulation, detoxifies, counters insomnia, and boosts energy.
