Pickled Beets and Eggs for Summer

Enjoy our weekly wellness tip from Licensed Acupuncturist, Michael Savalli, from the office of Elizabeth Martin.

Pickled Beets and Hard-Boiled Eggs – from Saveur.com

Ingredients – Serves 4

6 medium beets

1 medium white onion, peeled and sliced

1 tbsp. black peppercorns

1⁄4 tsp. whole cloves

2 tbsp. grated peeled fresh horseradish (optional)

3 cups cider vinegar

4 tbsp. sugar

4 hard-boiled eggs, peeled

Instructions

  1. Trim all but 2″ of stalks off the beets. Wash beets, then put into a medium pot, cover with water, and boil until soft, 45–60 minutes. Drain, pull off stalks, slip off skins, sliced beets, and put into a large glass jar.
  2. Add onions, peppercorns, cloves, and horseradish.
  3. Bring cider vinegar, 3 cups water, and sugar to a boil in a small pot, then pour into a jar. Set aside to cool, cover, and refrigerate until chilled. Store in refrigerator up to 1 month. Add eggs to jar at least 4 hours and up to 5 days before serving.

Beets are tremendously nutritious.  An often overlooked “superfood”, high in antioxidants and helps to prevent inflammation.  They help detoxify the liver and blood and also inhibit the growth of some cancerous tumors.  They can also improve metabolism and increase one’s stamina.

From a TCM point of view, beets are mildly sweet and also cooling.  Making them a great choice for Summer and Late Summer. They help immunity and digestion.  They balance blood sugar, aid eyesight, and relieve constipation. They nourish the blood, reduce anemia, and calm the Shen (spirit), to relieve restlessness and irritability.  Basically, you can’t go wrong with beets, and this recipe is a great way to enjoy them in summer.
