A good soup makes for a good meal for any season. In the warmer months, however, you may prefer foods that are on the cooler side. This Cold Asparagus Yogurt Soup can be enjoyed hot or cold. It also has fresh spring greens, and slight sourness of yogurt, making this a good, light, spring meal
Instructions
- Heat butter & oil in large pot, over medium heat. Add asparagus, onions, leeks, and pinch or two of salt. Cook for about 5 minutes, until soft.
- Add water, another pinch of salt, and a grind or two of pepper, bringing to a slight simmer. Cook another 10-15 minutes, till it’s very soft. Taste, and season if needed.
- Put soup and yogurt in a blender. Blend till smooth, perhaps in batches. Put back in pot, taste and season.
- Serve chilled or warm, as desired. Top with a dollop of yogurt, or a drizzle of olive oil if you like.
