Japanese Clear Soup Recipe – Weekly Wellness Tip

Here we are in February, just over the hump, and into the home stretch towards Spring.  We find ourselves with a few more weeks of living off the bounty of last season, and just beginning to implement our new plans for spring, and the fresh foods that come with it.

Soup is still a staple these winter months, and this recipe is based on a simple, but healthy Japanese Clear Onion soup, from website “Living Chirpy”.  It has simple ingredients, but big taste.  It’s one of those recipes you may find yourself coming back to again and again.

It has button mushrooms, which keep things moving smoothly digestively, and are very nourishing.  Carrots that help resolve phlegm.  Celery to clear up internal heat that may be stagnating.  Garlic that helps digestion.  Scallion that acts as a diuretic to drain excess fluids, and some hot sriracha sauce, to open those pathways.  These ingredients all work together to wake up your digestive system, which can get sluggish this time of year.  They also provide some hearty nutrition.

Without further ado, here is Japanese Clear Onion Soup:

Prep:

Sautee the onions till slightly brown.

Add carrots, celery, garlic, and water/broth.

Boil, then simmer, for 30 minutes.

Strain out the veggies, add the mushrooms and scallions…season to taste.

Ingredients:

1 handful of button mushrooms

2 carrots

2 celery stalks

2 garlic cloves

2 onions

1 handful scallions

6 cups water or vegetable broth

Seasonings

Soy sauce, siracha, salt & pepper
