Chickpea and Spinach Saute

Recipe for Spring – Spinach and Chickpea Saute. (From tcmworld.org)

This simple dish benefits several organs, with an emphasis on the Liver (this being the primary organ of Spring.) The Chickpeas will support the Large Intestine, Heart, and Spleen’s digestion. Spinach, garlic, lemon, and mint benefit the Liver. How you prepare your food matters too. This recipe, a light saute, is a good cooking method for Spring.

Ingredients:

1 Tbs. olive oil

4 cloves minced garlic

Pinch of salt

8 ounces canned, drained, chickpeas

1 bunch freshly chopped spinach

½ fresh lemon – squeezed for the juice

8 fresh mint leaves, chopped

Instructions

  • Saute olive oil, garlic, and a pinch of salt over medium heat. About 2 minutes, until you really smell the garlic.
  • Add chickpeas, cook another 5 minutes.
  • Add the spinach. Mix carefully as the spinach cooks down and wilts. (About 2-3 minutes)
  • Remove from heat, squeeze the lemon juice, top with mint, and serve warm
