Enjoy our weekly wellness tip from Licensed Acupuncturist, Michael Savalli, from the office of Elizabeth Martin.
October Week 3, 2018 – Carrot and Ginger Quinoa Bowl (Tcmworld.org)
- 1 cup rinsed quinoa (better when soaked 6-8 hours if possible)
- 2 cups water or vegetable broth
- 2 Tbs olive oil
- 3 thin slices of ginger
- 1 diced carrot
- Dash of salt
- 1 diced Tomato
- 1 diced Scallion
- Splash of soy sauce
- Cracked pepper to taste
- Handful of cilantro
Boil the quinoa in the water or broth. Let it simmer 20 min. till soft. Heat the oil in another pan with the ginger, carrots, and salt. Cook them for 1 minute, then add tomatoes. Toss for 2-3 minutes. Add pepper and cilantro, and toss again. Place quinoa in a large bowl. Sprinkle soy sauce onto it, then add veggies on top.
The ingredients in this dish are very warming. The colder temperatures of fall can impair the function of the lungs and large intestines. Warming foods like this help prevent this. These ingredients also help with the elimination of excess dampness and remove toxins. Quinoa is a great grain. It’s mildly sweet, which aids digestion. It also tonifies “qi” energy. It’s a good source of protein and calcium. Last but not least, it’s low in gluten.
