Summertime is hot, that makes it a time for cooling foods. Watermelon, apples, pineapple, cold drinks and teas, cucumbers, salads, smoothies…the list goes on and on. But did you know, that too much cold food could hurt your stomach? Cold foods are harder to digest. They make your stomach work harder to digest the food and absorb its nutrients. Too much cold food can lead to cramps, bloating, indigestion, and diarrhea. Keep that in mind this summer, so as not to overdo it with the cold. If you do start to develop some digestive problems, see if you can trace it back to maybe being caused by having too many cold, and raw foods in your diet.
Barley is a great food for summer. It’s very nourishing, and easy to digest. It also drains out retained water, helping your body detoxify, and feel less bloated. If you want to make barley even more digestible, soak it for about an hour before cooking. The other ingredients here offer many health benefits, depending on which you chose. If you want a little more sweetness, you can add some honey to the mixture. Choice berries are high in antioxidants. Go with organic, locally grown produce if you can. Seeds and nuts can help with constipation, some are high in Omega fatty oils, you have lots of options here. Have fun with the toppings and pick your own favorites.
Barley Cereal with Berries & Nuts

Ingredients:
- 1 cup barley
- 5 cups boiling water
- ¼ cup coconut or almond milk
- Handful of berries
- Handful of nuts
Directions
- Rinse the barley
- Add boiling water
- Simmer 30-45 minutes till tender
- Serve cold with choice of milk
- Add berries and nuts
