Avocado and Tomato, Topped On Toast

Avocado and Tomato Topped Toast

This is a variation of a friend’s recipe, that I’ve adopted for a healthy Summer lunch.

Ingredients

1 Avocado – peeled, and cubed

1 Tomato – cubed

1/4 Red Onion – diced

¼ cup black olives, diced

1-2 Tbs Extra Virgin Olive Oil

2 slices Udi’s gluten-free bread – Toasted

Salt & Pepper to taste

Mix all the main ingredients in a large bowl, then spoon them onto two slices of toasted Udi’s gluten-free bread. Eat it open-faced sandwich style, or with a knife and fork, however, you prefer.

Avocado is a great source of “good” fats. In TCM terms, it’s good for building blood and the bodies cooling “yin” energies. It also benefits many internal organs. Tomatoes are also cooling, help digestion, detoxification, and draining excess fluids. The red onion is slightly warming, balancing the other cooler ingredients. It also drains excess fluids by promoting urine and perspiration. EVO (olive-oil) is another source of “good” fats. Lastly, Udi’s bread is a very tasty gluten-free variety, making this dish safe to enjoy for those with gluten intolerance.
