Healthy and Simple Fall Recipe

Roasted Fall Veggies

Most of you know you should be eating more veggies.  They make up the base of the “food-pyramid”, with recommendations of 5-7 servings per-day.  In general, our American diet is composed of much too much meat.  That’s not to say that meat is bad for you, just that too much meat is bad for you.  We need to fit more veggies in our diet; and to do that, they need to be tasty.

You may also know of the suggestion to eat seasonally.  This is a great way to add a diversity of nutrients to your diet.  Energetically speaking, it helps us to get in tune with the various phases of different times of the year.  The way the food is prepared also makes a difference in how our bodies digest and utilize these energies.

With these things in mind, here is a recipe for Roasted Fall Veggies, from TCMworld.com.

Ingredients
¼ cup extra virg. Olive oil
3 medium carrots, cut to 1-inch chunks
2 cups Brussels sprouts, halved
2 cup fingerling potatoes, halved
3 med. Parsnips cut 1-inch chunks
1 Tbs dry thyme
1 tsp mushroom powder
Sea salt and fresh ground pepper to taste

Directions
 Heat oven to 400 deg. F.
Grease 11×17 baking sheet with extra virg. Olive oil.
Put veggies in a bowl and add dried herbs, salt, pepper, and oil.
Toss them well.
Spread veggies evenly on a baking sheet.  Bake 40 minutes.
Serve over rice, or as a side dish.

These veggies strongly support the lungs and large intestines.  These are the organs associated with fall.  This recipe also strengthens the function of the liver, and digestive system.  Roasting is a great way to prepare foods in the fall.  It’s a good idea to make this dish a staple, served regularly during the fall season.
